A few of my Cherokee Purple tomatoes are almost ready but none of the red varieties have turned yet. I got them in the ground a little later than usual because of all the spring rains. Mom picked a 5 gallon bucket yesterday and brought me up a few, she is canning tomato juice today. She also picked a bucket of cucumbers.
Here is a recipe for pickles you store in the fridge. These things taste like the Claussen style you find in the refrigerator section at the grocery store. I like to make a couple 1/2 gallon jars to keep in the back of my fridge. Mom makes a ton of these to give away, she should sell them!
Refrigerator Dill Pickles "Claussen Style"
20-25 small to medium cucumbers (for larger I quarter up so more can be packed into the jar)
2 quarts water
2 cups white vinegar
1/3 cup canning salt
1/3 cup finely minced onion
1/2 teaspoon mustard seed
1/2 teaspoon red pepper flakes
1 teaspoon black peppercorns
4 teaspoons minced fresh garlic
Mix all dry ingredients with the water and vinegar until salt is completely dissolved. When ready to use separate liquid from seasonings using a sieve. Reserve both parts!
4-5 wide mouth canning jars sterilized or you can use a couple 1/2 gallon jars as I mentioned above.
1 teaspoon dill seed or 2 sprigs of fresh dill in each quart jar.
1/2 teaspoon of pickle crisp per jar.
Wash cucumbers cut off 1/2 inch of the bottom of each one, half or quarter if nessesary.
Pack jars with cucumbers, evenly distribute seasonings between the jars then cover completely with vinegar/salt/water liquid. If you like hot stuff I sometimes add one jalapeno pepper. Using a knife run between the cucumbers to get rid of any air bubbles.
Place a flat lid on the jar and a ring loosely. Store in a completely dark area for 3-4 days. Each day check for scum and if any has formed skim off with a spoon and discard. Lightly shake the jars everyday and push any that have floated up under the vinegar solution, loosen ring back up after giving jar a shake. After 4 days tighten ring and store in the fridge.
I like to let them set in the fidge for a couple of weeks before eating, my brother is eating them in about day 2 lol. Pickles will keep refrigerated for 6-12 months.
